In fact, mānuka honey is generated the same way as other floral honeys. The honeybees harvest the nectar of the blossom. What differs is the formation of high MGO concentrations. The mānuka blossoms contain high levels of dihydroxyacetone (DHA). DHA naturally converts to MGO in the ripening process of the honey. This is unique to the flowers of the mānuka tree, also referred to as the New Zealand tea tree. |
Next to methylglyoxal, mānuka contains low PH levels, high sugar content, and low water content. This can prevent the growth of microbes. It contains fructose, glucose, maltose and sucrose – but has no fat, fibre or protein. |
